Diamond Botanical Garden and Waterfalls can be hike from the Soufriere town. Morne Coubaril and Fond Doux Estate can be toured by hired taxi or public minibus.

Hiked the Jacquot trail. A lot of uphill (then downhill) so need reasonable health. There is ziplining available as well as a wonderful tree top tram if you are not into hiking.
